What is a good cut of beef have been as rare medium?
I am preparing a surprise dinner for my lovely wife. She loves the beef is rare - medium and I want to surprise her with a good dinner. She has worked so hard this year to return to LPN nursing school (52 years, no less!) And I wish I had a nice surprise for her. Be specific as possible as to the type of cut - or if it a roast - and also how to prepare it is nice and juicy and is rare in the medium term. Also, if you have a special recipe "" You want share how to marinate would be nice too please:) Thank you!
In my opinion, almost all meat must be cooked bleeding. My favorite: Ribeye or New York Strip. Bone is preferable. Look for steak that is good "in marble, with a uniform mesh Nice fat in meat running. Get it thick, about 1 inch. Just salt and pepper, lots of it, do not be afraid of seasoning with these excellent steaks. Sometimes silly supermarket label as "Delmonico" but you have no idea of what you get if you buy it. Jump to a butcher, or at least against the butcher at the grocery store and ask bone sirloin. Grill is preferred - the season steaks, preheat until it is screamin 'hot and cook not a second over 3 minutes on first side, 2 minutes on the second. If you not a grid, you can do the same thing in a cast iron skillet on the stove - and it allows you to make a pan sauce, if desired. Serve this steak with a good Cabernet Sauvignon - please! This steak should be eaten with dry red wine, so ask your local wine shop for good. Enjoy!
