Why chefs in expensive restaurants not wear hair nets or some sort of head covering cooking?

Is not the hair the wrong food to a part of the price range? Even more so if you spent a lot of dough? So how come so many long-haired heads Marquee hipster simply let their locks flow freely in the kitchen?
